For now, Spain here means Valencia above all, for me the more relaxed alternative to Barcelona: sunny, food-focused and pleasantly low-key. The birthplace of paella combines a green riverbed park through the centre, futuristic architecture, an old fishermen’s quarter and one of the finest city beaches in Europe.
